Summertime Green Beans

Fresh from the farm stand or from the store,
green beans please even the pickiest
eaters. Look for thin beans for fewer
“strings.” Shallots add a subtle gourmet
touch to this side dish, but you can
substitute white onion if you prefer.

Ingredients

•   3 ½ pounds green beans
•   2 tablespoons olive oil
•   ½ cup minced shallots
•   2 tablespoons water
•   1 teaspoon salt
•   ¼ teaspoon pepper

PREPARATION
Prep Time: 15 minutes

Bring a large stockpot of water to a boil.
Trim ends from beans. Drop beans into
boiling water and cook 8 – 10 minutes or
until crisp-tender. Drain and rinse with cold
water to stop beans from over-cooking.
Heat oil in a large pot over medium heat.
Add shallots and sauté 3 minutes or until
tender. Add drained green beans and 2
tablespoons of water. Cook 3 minutes or
until beans are tender, stirring occasionally.
Remove from heat, and stir in salt and
pepper before serving.
