Baked Mozzarella Bites

This quick after-camp or after-school snack is also a great alternative to fried appetizers for adults. Add cayenne, oregano or other seasonings to the coating when you’re ready to spice things up!

Ingredients

• 1/3 cup Panko (Japanese breadcrumbs)
• 3 (1-oz) sticks part-skim mozzarella string cheese
• 3 tablespoons egg substitute
• Cooking spray
• ¼ cup lower-sodium jarred marinara sauce


PREPARATION

1. Preheat oven to 425°. Coat a baking sheet with cooking spray and set aside.
2. Heat a medium size skillet over medium heat. Add breadcrumbs and cook until lightly toasted, stirring frequently. Remove from heat and transfer Panko to a shallow dish.
3. Pour egg substitute into another shallow dish.
4. Cut each mozzarella stick into 1-inch pieces. Dip each piece, one at a time, in egg substitute then dredge in Panko. Place each piece on coated baking sheet.
5. Bake at 425° for 3 minutes or until the cheese as softened and heated through.
6. Meanwhile, pour marinara sauce into a microwave-safe bowl and heat for 1 minute, stirring to avoid splatters. Serve hot cheese bites with sauce.


Yield: 4 Servings (3 bites and 1 tablespoon of sauce each)
