A Beautiful Lassi

Lassi is a frothy yogurt-based fruit drink from Southern India, and usually contains spices and seasonal fruits from the region. It’s thinner than a milkshake or smoothie, and thicker than flavored milk. Serve it anytime, and especially as an post-workout pick-me-up. NOTE: Reduce the sugar in the recipe by using plain yogurt and adding 1 teaspoon of vanilla.

INGREDIENTS

2 cups vanilla low-fat yogurt
1 cup canned crushed pineapple
in juice, undrained
¼ cup light coconut milk
⅛ – ¼ teaspoon bottled ground fresh ginger, or freshly ground from the root
6 ice cubes


PREPARATION

1. Place all ingredients into a blender. Process until smooth. Serve immediately.

Serves 3, about 1½ cups each
