A simple, simply delicious side for fish, chicken, beef – and sandwiches too! Try it as topping for delicious homemade fish tacos: Wrap a grilled fish filet in a whole-grain tortilla and top it with ½ cup of slaw. Delicioso!
Ingredients • 3 cups shredded cabbage • 1 ½ cups thinly sliced radishes • ½ cup green onions, cut on a diagonal • 3 tablespoons olive oil • 2 tablespoons fresh lemon juice • 1/3 cup fresh mint, chopped • ½ teaspoon salt • ¼ teaspoon ground red pepper flakes
PREPARATION Prep/cook time: 15 minutes
Combine first five ingredients, tossing well to mix. Sprinkle with mint, salt and pepper. Serve right away or chill briefly so cabbage doesn’t wilt.
