Chocolate Chip Cookies – A Healthy Makeover
Move over fat-filled cookies – make room for daddy’s new favorite sweet. Applesauce is the secret to the soft, chewy texture and the fat reduction. And there’s no skimping on chocolate, either. Hooray!

Ingredients • 1¼ cups all-purpose flour (use whole wheat if you prefer) • 1½ teaspoons baking powder • 3/4 teaspoon salt • ½ cup applesauce • 1 cup packed brown sugar • ¼ cup butter, softened • 1 tablespoon vanilla extract • 1 large egg (or egg substitute equivalent) • 1 cup semisweet chocolate chips • Cooking spray
PREPARATION Prep Time: 15 minutes Bake Time: 10 minutes
1. Preheat oven to 375°. 2. Coat baking sheets with cooking spray and set aside. 3. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt in a small bowl; stir well with a whisk. 4. Spoon applesauce into a fine sieve over a bowl; let stand 15 minutes. Discard liquid. Scrape drained applesauce into a large bowl. 5. Add sugar and butter; beat with a mixer at medium speed until light and fluffy (about 2 minutes), then beat in vanilla and egg. 6. Add in flour mixture; beating at low speed until well-blended. 7. Fold in chips. 8. Drop by level tablespoons 2 inches apart onto coated baking sheets. 9. Bake at 375° for 10 minutes or until almost set. Cool on pan 2 to 3 minutes or until firm. 10. Remove cookies from pan; cool on wire racks.
