Cider-Braised Cabbage

Simple, fast and delicious, this will become a regular rotation in your veggie repertoire. It’s easily scaled up or down too, making it just as simple for dinner for two as it is for a gang of 10. Serve it with hot dogs or beside roasted pork or chicken.

Ingredients:

1 tablespoon canola oil
2 cups sliced onion
8 cups sliced green cabbage
1 cup apple cider
2 tablespoons whole-grain mustard
¼ teaspoon salt
1 tablespoon cider vinegar

PREPARATION:
1. Heat a large skillet over medium-high heat. Add canola oil and swirl to coat bottom of skillet.

2. Add onion and sauté 2 minutes. Add cabbage, cider, mustard, and salt, tossing to combine, then cover and cook 5 minutes.

3. Uncover and cook 8 minutes more or until cabbage wilts, stirring occasionally. Stir in vinegar before serving.


Serves 6, 1 cup each
