Cool Weather Chicken with Apples

Autumn is in full swing in this dish, filled with apples, pie spices, and the tang of garlic. Ready in less than an hour, it’s meal you’ll fall for over and over again.

Serves 4, 2 thighs and ⅔ cup apple mixture

Ingredients
6 cups peeled, coarsely chopped Braeburn apples (about 2 pounds)
2 teaspoons chopped fresh sage
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
4 garlic cloves, chopped
½ teaspoon salt, divided
Cooking spray
8 chicken thighs (about 2 pounds), skinned
¼ teaspoon black pepper
Preparation
  1. Preheat oven to 475°. Coat a jelly roll pan or cookie sheet with cooking spray.
  2. Mix together apples, sage, cinnamon, nutmeg, cloves and ¼ teaspoon salt. Spread apple mixture on prepared pan.
  3. Sprinkle chicken with pepper and remaining ¼ teaspoon salt. Arrange chicken on top of the apple mixture. Bake at 475° for 25 minutes or until chicken is done and apple is tender. Remove chicken from pan and cover it to keep it warm.
  4. Use a potato masher to partially mash apple mixture, then divide into servings and top mashed apples with chicken.
