Ingredients

1 cup part-skim ricotta cheese
1 cup (4 oz.) shredded part-skim mozzarella cheese
¼ cup (1 oz.) shredded Parmesan cheese
1 (1-pound) pizza crust
1 cup fresh basil, thinly sliced
½ cup shallots, thinly sliced
½ cup fresh spinach, finely chopped
½ - 1 teaspoon crushed red pepper flakes
½ teaspoon black pepper
½ teaspoon dried oregano
¼ teaspoon garlic powder
1 cup plum tomatoes, thinly sliced

PREPARATION
1. Preheat oven to 425°.
2. Combine three cheeses in a medium bowl. Spread cheese mixture over pizza crust, leaving a half-inch border around the edge of the crust.
3. Sprinkle cheese with basil, shallots, spinach, red pepper, black pepper, oregano and garlic powder. Top with tomato slices in a single layer.
4. Place pizza on a baking sheet. Bake for 10 minutes or until cheese is soft and bubbly.
5. Remove pizza to a board and cut into 6 slices.

Serves 6 (one slice per person)
