Fish & RelishYes, fish may seem “bland” to many people. This relish gives Arctic Char the zest your taste buds crave, courtesy of tangy capers and sweet orange. Can’t find Arctic Char? It’s just as good with any fish you like. Note: You just need one orange for this recipe. First, grate the rind, then cut the orange in half and squeeze the tablespoon of juice you need, then peel the orange and use the sections. Simple!

1 cup orange sections
2 tablespoons slivered red onion
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon capers, minced
1 teaspoon grated orange rind
1 tablespoon fresh orange juice
1 tablespoon extra-virgin olive oil
1 teaspoon rice vinegar
⅛ teaspoon ground red pepper
4 (6-ounce) Arctic Char fillets
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1. In a small bowl, toss together orange sections, onion, parsley, capers, rind, juice, oil, vinegar and red pepper in a small bowl. Cover and chill until ready to serve.
2. Sprinkle fish with salt and pepper. Heat a large heavy skillet over medium-high heat and coat pan with cooking spray.
3. Add fish to pan and cook 4 minutes on each side or until desired degree of doneness.
4. Top each fillet with about ¼ cup of relish.
