INGREDIENTS 1 lb. ground turkey breast ¾ cup diced unpeeled pear ¾ cup finely chopped red bell pepper ½ cup finely chopped red onion ¼ cup chopped fresh cilantro 1 teaspoon dried rubbed sage ½ teaspoon salt ½ teaspoon ground cumin ½ teaspoon ground allspice ½ teaspoon crushed red pepper 1 tablespoon canola oil, divided use
PREPARATION 1. Combine all ingredients except oil in a medium bowl. Shape mixture into 8 ½-inch-thick patties.
2. Heat 1½ teaspoons oil in a large nonstick skillet over medium heat. Add 4 patties to pan and cook 4 minutes; flip patties over and cook 3 minutes more or until done.
3. Remove patties from pan and drain on paper towels. Repeat procedure with remaining oil and remaining patties.
4. Remove from pan and cool biscuits on a rack before serving.
