Mushroom Oatmeal

Who says oatmeal has to be sweet? For all you savory breakfast lovers out there, this one’s for you! It’s also a satisfying vegetarian dinner entrée.

Ingredients:

¾ cup water
½ cup old-fashioned oats
Dash of salt
1 teaspoon olive oil
½ cup sliced mushrooms
2 tablespoons goat cheese, crumbled, divided use
2 tablespoons half-and-half (save calories by using 2% or fat-free milk)
⅛ teaspoon salt
⅛ teaspoon chopped fresh thyme

PREPARATION:
1. Bring water to a boil in a medium saucepan. Stir in oats and salt.

2. Reduce heat and simmer 5 minutes, stirring occasionally.

3. Heat olive oil in a small skillet over medium heat. Add mushrooms and sauté for 4 minutes.

4. When oatmeal is cooked, stir in 1½ tablespoons of goat cheese, half-and-half/milk, ⅛ teaspoon salt and fresh thyme.

5. Spoon seasoned oatmeal into a bowl and top with remaining ½ tablespoon of goat cheese before serving.

Serves 1
