PLANT-BASED DIET

Say good morning with a bowl of deliciousness. To make the most of every morning, make a big batch of this mixture and store it in a sealed container in the freezer. Then just scoop out ½ a cup at a time and cook individual servings in 1½ cups of boiling water.

INGREDIENTS

⅓ cup flaxseed
1¼ cups steel-cut (Irish) oats
⅔ cup dried apricots, coarsely chopped
⅔ cup dried apple, coarsely chopped
⅔ cup dried banana chips
½ cup cracked wheat
½ cup uncooked regular grits
½ cup oat bran
⅓ cup wheat bran
¾ teaspoon salt
13½ cups water


PREPARATION

1. Place flaxseed in a spice or coffee grinder and process until coarsely ground. In a large bowl, combine flaxseed with oats, fruits, wheat, grits, brans and salt, stirring well to combine.

2. Bring water to a boil in a large saucepan. Add cereal mixture, stir, cover and reduce heat to a simmer. Simmer 15 minutes, stirring occasionally.

3. Uncover and cook 2 minutes more or until thick, stirring constantly. Serve immediately.


Serves 9, 1½ cups each cooked or ½ cup dry
