Ingredients: 1 tablespoon olive oil ½ red onion, sliced into thin rings 2 pounds fresh baby spinach, washed, stemmed and patted dry ½ teaspoon grated lemon peel ¼ cup crumbled feta cheese Salt and pepper to taste
PREPARATION: 1. Heat a large pan (big enough to hold all the spinach) over medium/high heat. 2. Add oil and onion. Sauté until the onion starts to wilt. 3. Add spinach and sauté 2-3 minutes. 4. Add lemon peel, salt and pepper and cook together for 10 – 15 seconds to allow the flavors to meld. 5. Turn off heat and add crumbled feta. Stir to melt and incorporate. 6. Serve immediately.
