Ingredients 1 tablespoon cumin seeds 1 tablespoon brown sugar ½ teaspoon hot smoked paprika ¼ teaspoon salt ¼ teaspoon freshly ground black pepper 4 (4-ounce) boneless center-cut pork chops, rinsed and patted dry Cooking spray
PREPARATION 1. Place cumin seeds in a small skillet. Cook over medium heat, stirring frequently, for 1 minute or until you begin to smell the cumin and see a bit of smoke. Remove seeds to a bowl and allow to cool for 2 minutes.
2. Place cumin seeds in a clean coffee grinder or blender; process until ground to a powder.
3. Combine ground cumin, sugar, paprika, salt, and pepper in a bowl. Rub mixture evenly over pork chops.
