Indoor Grilled Pork Chops


Get ready for summer with the smoky flavor of these chops. Roasting and grinding whole cumin seeds makes all the difference in the fragrance and taste of this dish.
Tip: Prepare more cumin than is called for here and keep it in an airtight jar and use it for other recipes. It’s so easy and delicious you may never buy pre-ground cumin again.

Ingredients

1 tablespoon cumin seeds
1 tablespoon brown sugar
½ teaspoon hot smoked paprika
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
4 (4-ounce) boneless center-cut pork chops, rinsed and patted dry
Cooking spray

PREPARATION
1. Place cumin seeds in a small skillet. Cook over medium heat, stirring frequently, for 1 minute or until you begin to smell the cumin and see a bit of smoke. Remove seeds to a bowl and allow to cool for 2 minutes.

2. Place cumin seeds in a clean coffee grinder or blender; process until ground to a powder.

3. Combine ground cumin, sugar, paprika, salt, and pepper in a bowl. Rub mixture evenly over pork chops.

2. Heat a grill pan (a pan with ridges) over medium-high heat and coat with cooking spray. Cook pork in pan for 5 minutes on each side.



Serves 4
1 chop each
