Ingredients: 1 pound fresh okra, stem trimmed away Salt to taste 2 tablespoons extra virgin olive oil Fresh thyme leaves to taste (optional) Freshly ground pepper
PREPARATION: 1. Preheat oven to 450 degrees. Rinse okra and drain well on a towel, drying well before cooking. 2. Place okra in a large bowl; toss with olive oil until pods are lightly coated; sprinkle with salt to taste. 3. Use your hands or a slotted spoon to remove okra from the bowl, leaving excess oil behind. Place okra in a single layer on a sheet pan. 4. Roast 15 minutes, shaking the pan every 5 minutes to avoid burning on one side. When done, the okra will be lightly browned and tender with a roasted aroma. 5.
