Ingredients:

1 cup uncooked bulgur
1 cup boiling water
2 tablespoons olive oil
2 tablespoons lime juice
½ teaspoon salt
8 large basil leaves, finely chopped
1 garlic clove, minced
¼ cup chopped red onion
12 large olives, sliced (about ¾ cup)
1 large tomato, chopped
Lime wedges (optional) 

PREPARATION:
1. Combine bulgur and boiling water in a large bowl. Cover and let stand for 45 minutes.
2. In a small bowl, whisk together oil, lime juice, salt, basil and garlic until combined into a dressing.
3. Toss onion, olives, tomato, bulgur and dressing together.
4. Garnish with lime wedges, if desired.

Serves 4 (1 cup each)
