Ingredients

• 2 teaspoons olive oil

• 1½ teaspoons dried rosemary (or one tablespoon fresh leaves)
• ¼ teaspoon salt

• ¼ teaspoon black pepper
• 8 skinless, boneless chicken thighs (about 1 pound total)
• 1 (14.5-ounce) can stewed tomatoes, undrained
• 1 (15-ounce) can navy beans, drained
• ¼ cup pitted kalamata olives, chopped




PREPARATION
Prep time: 20 minutes

1. Heat olive oil in a large skillet over medium-high heat.
2. Combine rosemary, salt, and pepper in a small bowl. Sprinkle mixture over one side of chicken.
3. Place chicken in hot pan, seasoned side down; cook 3 minutes.
4. Reduce heat to medium; turn chicken over. Add tomatoes and beans; cover and simmer 10 minutes or until chicken is done.
5. Stir in olives before serving.

Servings: 4 (2 thighs and ¾ cup bean mixture each)
