Ingredients:

2 tablespoons jarred Dijon mustard
2 tablespoons fresh or 2 teaspoons dried rosemary, crushed
2 tablespoons chopped fresh or 2 teaspoons dried mint flakes
4 teaspoons honey
½ teaspoon coarsely ground pepper
4 (4-ounce) lean lamb loin chops

PREPARATION:
1. Preheat broiler.

2. Combine mustard, rosemary, mint, honey and pepper in a small bowl.

3. After trimming excess fat, place chops on broiler pan. Broil 5 minutes on each side.

4. Brush mustard mixture over chops. Broil 2 minutes on each side, basting occasionally with more mustard mix.


Serves 2, 2 chops each
