PB and Banana Chocolate Chip Cookies

There’s some sugar in the chocolate chips, but none added to the batter. Yet these cookies turn out moist, sweet and delicious. One is a great treat in a lunchbox!

Ingredients:

2 cups uncooked regular oats
½ cup chocolate chips
1 cup chopped walnuts
½ cup creamy peanut butter
½ teaspoon salt
1½ cups mashed banana
⅓ cup vegetable oil
1 teaspoon vanilla extract

PREPARATION:
1. Preheat oven to 350°F (176°C).
2. Combine oats, chocolate chips, walnuts, peanut butter and salt in a large bowl, stirring well.
3. In a separate bowl, stir together the banana, oil, and vanilla.
4. Add the banana mixture to dry ingredients, stirring well as you add.
5. Let the mixture sit for 15 minutes.
6. Place rounded tablespoon-size scoops of dough onto ungreased baking sheet. Bake for 15 minutes or until lightly golden.
7. Transfer the cookies to wire racks. Cool completely before serving.

Serves 12: (1 cookie each)
