Peach and Brie Quesadillas with Lime-Honey Dipping Sauce

Ingredients

For the sauce:
2 tablespoons honey
2 teaspoons fresh lime juice
½ teaspoon grated lime rind

For the quesadillas:
1 cup firm ripe peaches (about 2 large),
peeled and thinly sliced
1 tablespoon chopped fresh chives
1 teaspoon brown sugar
3 ounces Brie cheese, thinly sliced
4 (8-inch) fat-free flour tortillas
Cooking spray

PREPARATION
1.  Whisk all sauce ingredients together in a small bowl and set aside to allow flavors to meld.
2.  In another bowl, combine peaches, chives and sugar, tossing gently to coat.
3.  Lay the flour tortillas out on a flat surface. Divide the cheese between the tortillas, placing it on half of the circle. Top the cheese with an equally divided amount of peach mixture.
4.  Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
5.  Fold tortillas in half and place two quesadillas in the pan. Cook for 2 minutes per side until the tortillas are lightly browned and crisp.
6.  Remove from pan and keep warm as you cook the two remaining quesadillas.
7.  Cut each quesadilla into 3 wedges and serve with sauce.

Serves 6
2 quesadilla wedges and about 1 teaspoon sauce
