Ingredients: 7 cups very thinly sliced green cabbage (about 1 medium head of cabbage) ½ cup grated carrot 2 tablespoons finely chopped onion 1 tablespoon minced fresh cilantro ¼ cup fresh lime juice 1 tablespoon cider vinegar 1½ teaspoons extra virgin olive oil ¼ teaspoon salt ¼ teaspoon freshly ground black pepper
PREPARATION: Mix cabbage, carrot, onion and cilantro in a large bowl. Whisk together juice, vinegar, oil, salt and pepper. Drizzle liquid mixture over cabbage mix and toss well to combine. Cover and chill 15 minutes before serving.
