Radishes and Greens
with Avocado Dressing

Add interest to your salads by mixing textures and flavors. Peppery radishes and mild baby greens work with sweet grape tomatoes to balance the creamy dressing. Add more or less hot sauce to the dressing to please your taste buds

Ingredients:

½ cup diced avocado
¼ cup cilantro leaves
1 tablespoon lime juice
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon hot sauce
1 cup thinly sliced radishes
½ cup halved grape tomatoes
1 (5-ounce) package mixed baby greens
¼ cup pumpkin seeds, toasted

PREPARATION:
1. Place avocado, cilantro leaves, lime juice, olive oil, salt, and hot sauce in a food processor and blend until smooth.

2. In a large salad bowl, toss together radishes, tomatoes, and mixed greens.

3. Drizzle greens mix with dressing and top with pumpkin seeds before serving.


Serves 6, about 1½ cups each
