INGREDIENTS

1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh thyme
1 tablespoon minced garlic
2 teaspoons grated lemon rind
2 teaspoons grated lime rind
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
1 (2¼-pounds) salmon fillet
Cooking spray 


PREPARATION

1. Preheat oven to 400°.

2. In a small bowl, combine parsley, thyme, garlic, citrus rinds, salt and pepper.

3. Coat a broiler pan rack with cooking spray. Place salmon on the rack in the pan and rub the herb/citrus mixture over the top surface of the salmon.

4. Bake for 15 minutes or until the fish flakes easily when tested with a fork. 

Serves 6, 4½ ounces each
