Roasted Grapes
& Feta Salad

When you roast grapes, the sweetness concentrates and some of the juices release. Drizzle those juices over the salad before serving. This is an ideal salad to serve at the end of the meal in place of dessert.

Ingredients:

1½ cups seedless red grapes
1 tablespoon balsamic vinegar
3 teaspoons olive oil (divided use)
¼ cup toasted walnuts
2 teaspoons fresh lemon juice
¼ teaspoon ground black pepper
3 ounces arugula
1 ounce (about ¼ cup) crumbled feta cheese

PREPARATION:
1. Preheat oven to 450° and line a baking sheet with foil.

2. Combine grapes, balsamic vinegar and 2 teaspoons of oil in a bowl.

3. Place coated grapes on baking sheet and roast for 10 minutes.

4. Toss roasted grapes with walnuts, lemon juice, remaining teaspoon olive oil, pepper and arugula. Top with feta cheese and drizzle with grape juices from pan.


Serves 4, 1 cup each
