There are many types of spring and summer radishes to choose from, especially at farmers markets. Whether you like them mild or peppery, this slaw will set your taste buds wild! You can also substitute cabbage for half of the radishes for a different flavor. Halve the recipe for one family meal, or double it for parties.
Ingredients 4 cups radishes (about 40), sliced into matchstick size strips 2 cups finely chopped yellow bell pepper 1½ cups shredded carrot ½ cup white wine vinegar 4 teaspoons sugar 1 tablespoon chopped fresh dill 1 tablespoon olive oil ½ teaspoon salt ½ teaspoon black pepper
PREPARATION • Combine vegetables in a large bowl. • In another bowl, whisk together the vinegar and remaining ingredients, being sure to combine well. • Drizzle dressing over slaw; toss well to combine. • Serve immediately.
