Ingredients 2 (10-ounce) packages fresh spinach 1/4 cup finely chopped green onions 1 teaspoon sesame seeds, toasted 2 teaspoons low-sodium soy sauce 1/2 teaspoon dark sesame oil 1/4 teaspoon kosher salt 2 garlic cloves, minced
PREPARATION 1. Steam one package of spinach, covered, for 5 minutes or until the spinach wilts. Place steamed spinach in a colander to drain. 2. Repeat procedure with second package of spinach and add to first batch in the colander. Cool slightly, and squeeze dry. 3. Place all spinach in a large bowl. Add remaining ingredients and use your hands to toss the mixture well and combine the flavors. 4. Serve chilled or at room temperature.
Note: Be sure to steam the spinach in two batches because there’s so much of it.
