1. Cook cumin seeds in a small skillet over medium heat for 1 minute or until fragrant, stirring frequently. Grind in a clean coffee grinder or blender until finely ground. 2. In a small bowl, combine ground cumin, sugar, paprika, salt, and pepper; rub mixture evenly over chops. 3. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Cook pork 5 minutes on each side or until done.
