Cucumber & Mint Salad

½ cup prepared zesty Italian salad dressing
⅓ cup fresh mint leaves, divided
2 serrano chiles, seeded, finely chopped and divided
1 large English cucumber
4 cups fresh strawberries, chopped
1 small red onion, finely chopped
1 fresh lemon, quartered and seeded
1. Blend together dressing, ¼ cup mint leaves and 4½ teaspoons of chiles in blender until smooth. Chop remaining mint with knife and set aside.
2. Peel, seed and chop half of the cucumber and place in medium bowl. Add berries, onions, remaining chiles and ¼ cup dressing mix and stir gently together.
3. Cut remaining cucumber into very thin slices. Toss with remaining dressing mixture and chopped mint; place on platter. Top with dressed berry mixture. Squeeze lemon wedges over salad just before serving.
