Summertime Salsa Cruda

You’ll find endless summer flavor and uses for this refreshing salsa. Try it on top of simply grilled chicken, serve it with toasted pita chips, or even serve it as a garnish with vanilla ice cream. Want it a little hotter? Add more jalapeño or use hotter serrano or habanero chiles!

Ingredients

2¼ cups nectarines or peaches, finely diced into ¼-inch dices
1½ cups radishes, thinly sliced
½ cup chopped cucumber (deseeded)
¼ cup finely chopped red onion
1 tablespoon fresh lime juice
2 teaspoons chopped fresh cilantro
1 jalapeño, finely chopped (optional)
1½ teaspoons sugar
¼ teaspoon salt

PREPARATION
1.  Combine all ingredients in a medium bowl; toss well.
2.  Allow mixture to stand and combine for 30 minutes before serving.

Serves 12
