Ingredients

Salad:
• 4 cups gourmet salad greens
• 2 cups thinly sliced nectarines or peaches (about 2)
• ¼ cup Walnut Oil Vinaigrette (recipe below)

Walnut Oil Vinaigrette:
• 1/4 cup red wine vinegar
• 2 tablespoons minced shallots
• 2 tablespoons walnut oil
• 2 tablespoons honey
• 1 tablespoon fresh lemon juice
• ½ teaspoon salt
• ¼ teaspoon freshly ground black pepper



PREPARATION

Salad
Combine greens and fruit in large bowl. Drizzle with vinaigrette and toss gently to coat.

Vinaigrette
Combine all ingredients, stirring with a whisk. Store in refrigerator for up to 1 week.

Servings: 4 (about 1 cup each)
