Sweet Potato Fries
Oven baked goodness that’s as delicious as traditional fries? You bet. Delicious as a side to meat, chicken or fish, the secret is the rich flavor of sweet potatoes. Want an unusual dessert or snack? Substitute cinnamon sugar for the salt and pepper.

Ingredients • 2 large sweet potatoes • 2 tablespoons olive oil • salt and pepper to taste
PREPARATION Prep Time: 25 minutes
Preheat an oven to 450 degrees. Peel the sweet potatoes (or scrub well and leave unpeeled). Cut potatoes into long thin strips. Dry strips with paper towel, removing as much dampness as possible. Drizzle half the oil onto the bottom of a baking sheet. Add potatoes to baking sheet and drizzle remaining oil on top. Sprinkle with salt and pepper, tossing by hand to distribute the oil and seasonings. Bake 25 minutes or until golden brown.
