Ingredients

1½ cups vanilla wafer crumbs
1/3 cup canola oil
2 boxes (4-serving size each)
   Jell-O vanilla  sugar-free instant pudding mix
2¾ cups skim milk
1 teaspoon orange extract
1 seedless orange, peeled and thinly
   sliced into rounds

PREPARATION
•   Preheat oven to 350 degrees.

•   Make the crust: In a large bowl, combine cookie crumbs and oil. Press mixture into bottom and up the sides of a 9-inch pie pan (glass is fine too). Bake in preheated oven for 10 minutes or until golden brown. Remove from oven and allow to cool.

•   For the filling: Prepare the pudding according to package directions, using the skim milk and stirring in the orange extract.

•   Build the pie: Spoon the pudding into the cooled crust, creating a smooth surface on top. Cover with plastic wrap and refrigerate for at least 2 hours.

•   Just before serving, arrange the orange slices on top of the pie, overlapping slices in an attractive pattern. Slice into 8 wedges and serve.
