Watermelon-Mint Cool-down
Use the season’s sweetest watermelon for a homemade soft drink that’s better than any fruit drink on the store shelf! For a light refresher with lower calories, replace the sugar with your favorite sugar-free sweetener – or leave it out completely for a more tart taste.

Ingredients • 1¼ cups water • ½ cup sugar • 1/3 cup coarsely chopped fresh mint • 1 tablespoon grated lime rind • 1 tablespoon grated lemon rind • 12 cups cubed seeded watermelon • ¼ cup fresh lime juice • 3 tablespoons fresh lemon juice
PREPARATION Prep Time: 30 minutes
Combine the water and sugar in a small saucepan; bring to a boil over medium-high heat. Cook for 30 seconds or until sugar dissolves, stirring frequently. Remove from heat; stir in mint and citrus rinds. Let stand 20 minutes. Pour through a strainer or fine mesh sieve over a bowl and discard the solids. In three batches, process the watermelon and syrup in a blender until smooth. Pour the puree into a large pitcher, adding each batch to the last. Stir in lime and lemon juices. Refrigerate until ready to serve or serve immediately over ice, stirring occasionally as you pour.
Yield: 9 1-cup servings
