Slow roasting intensify the sweetness of off-season tomatoes. Plan to make this on a bad weather day when you’ll be home and have time to watch the oven. While it may take all day to slow-roast the tomatoes, the result is a versatile summer flavor that brightens winter meals.

Ingredients

Cooking spray
1 tablespoon sugar
1 tablespoon extra-virgin olive oil
½ teaspoon salt
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon freshly ground black pepper
4 pounds plum tomatoes, halved lengthwise
  (about 16 medium)




PREPARATION

1. Preheat oven to 200°.
2. Spray a baking sheet with cooking spray.
3. Combine remaining ingredients in a large bowl, tossing gently to coat. Arrange tomatoes cut side up on coated baking sheet. Roast at 200° for 7½ hours.
