Southern Style Potatoes
with Garlic and Herbs
1 1/2 lb Russet Potatoes, Flesh and Skin
1 clove garlic
2 tbsp Olive Oil
1 1/2 oz Rosemary, Fresh,chopped
2 tsp Thyme, Fresh,chopped
2 ea. Bay Leaf, Whole 1/4 tsp Salt
1/4 tsp Black Pepper, Ground
1. Preheat the oven to 400 degrees. Scrub the potatoes well to remove any dirt and pat dry with a paper towel.
Lightly oil a shallow baking dish or sheet pan.
2. Cut potatoes into a medium dice and toss with garlic, olive oil and herbs.
Season with salt and pepper.
3. Arrange the potatoes in a single layer in the baking dish and bake, uncovered, for 25-40 minutes
or until tender when pierced with a knife. Turn several times while cooking to ensure even browning.
CCP: Cook to an internal temp of 135 degrees for at least 15 seconds.
4. Serve immediately.
